Preparation
- Make sure the grill is well cleaned and oiled, then preheat it to 425°F (medium-high heat).
- Divide pizza dough into 5-8 portions and stretch or roll into desired size and thickness, placing on parchment paper.
- Brush the tops with olive oil, then lift the parchment and carefully flip the crusts onto the grill, oil side down, and peel off the parchment.
Cooking
- Cover and cook for 2-3 minutes, checking for doneness.
- Flip the pizzas onto a plate and add sauce and toppings to the cooked side.
- Lower the grill heat and slide pizzas back onto the grill to cook the bottom side for another 3-5 minutes, until cheese is melted and the bottom crust is golden.
Notes
Consider portion control for a healthy meal. A 1/4 of a medium pizza is a reasonable serving size. Leftover grilled pizza can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze wrapped slices for up to 2 months.
