Method
 

Preparation
  1. Toss cubed chicken breasts in a mixing bowl with olive oil, paprika, garlic powder, oregano, salt, and pepper. Marinade for at least 30 minutes.
Build Skewers
  1. Thread marinated chicken, chopped red bell pepper, and onion onto skewers.
Grill Skewers
  1. Preheat grill or skillet on medium-high heat. Grill skewers for 10-12 minutes, turning occasionally until chicken is cooked through.
Prepare Potatoes
  1. Toss potato wedges on a baking sheet with olive oil, paprika, salt, pepper, and parsley. Roast at 425°F (220°C) for 25-30 minutes until golden.
Assemble Plate
  1. Serve grilled chicken skewers with crispy potatoes and a cup of lettuce. Add tzatziki or garlic sauce for dipping.
