For the Chicken Marinade
  • 4 pieces Chicken leg quarters Using skin-on for juiciness.
  • 2 tablespoons Olive oil Heart-healthy option.
  • 1 tablespoon Paprika Adds color and smokiness.
  • 1 tablespoon Garlic powder For fragrance and taste.
  • 1 teaspoon Black pepper Enhances seasoning.
  • 1 teaspoon Onion powder Adds depth of flavor.
  • 1 teaspoon Dried thyme Infuses herbaceous flavor.
  • 1 teaspoon Chili flakes Adds mild heat.
  • to taste teaspoon Salt Enhances overall flavor.
For the Potatoes
  • 4 medium Potatoes Cut into wedges.
For the Coleslaw
  • 2 cups Coleslaw mix Adds refreshing crunch.
  • 0.5 cups Mayonnaise For a creamy dressing.
  • 1 tablespoon Lemon juice Adds zesty brightness.
  • 1 piece Cucumber Sliced for garnish.
  • 0.5 teaspoon Chili powder For garnish and spice.

Method
 

Preparation
  1. Mix olive oil, paprika, garlic powder, onion powder, thyme, chili flakes, salt, and black pepper in a mixing bowl.
  2. Rub the marinade all over the chicken leg quarters and marinate for at least 30 minutes.
  3. Toss potato wedges in a bowl with olive oil, paprika, salt, and pepper, ensuring they are evenly coated.
Cooking
  1. Preheat the oven to 400°F (200°C) and bake potato wedges for about 35 minutes, turning halfway through.
  2. While potatoes bake, heat the grill or oven to medium-high heat and grill the marinated chicken for about 35 to 40 minutes, turning halfway through.
Serving
  1. In a mixing bowl, combine coleslaw mix, mayonnaise, and lemon juice. Stir until well mixed.
  2. On a plate, serve a chicken leg quarter next to crispy potato wedges and a portion of creamy coleslaw. Garnish with cucumber slices and sprinkle some chili powder on top.

Notes

For a healthier option, remove the skin from the chicken. Store leftovers separately for optimal crispiness.
