- Rub the marinade all over the chicken leg quarters and marinate for at least 30 minutes.
- Toss potato wedges in a bowl with olive oil, paprika, salt, and pepper, ensuring they are evenly coated.
Cooking
- Preheat the oven to 400°F (200°C) and bake potato wedges for about 35 minutes, turning halfway through.
- While potatoes bake, heat the grill or oven to medium-high heat and grill the marinated chicken for about 35 to 40 minutes, turning halfway through.
Serving
- In a mixing bowl, combine coleslaw mix, mayonnaise, and lemon juice. Stir until well mixed.
- On a plate, serve a chicken leg quarter next to crispy potato wedges and a portion of creamy coleslaw. Garnish with cucumber slices and sprinkle some chili powder on top.
Notes
For a healthier option, remove the skin from the chicken. Store leftovers separately for optimal crispiness.
