Ingredients
  

For the Marinade
  • 2 tbsp olive oil
  • Juice of 1 lemon lemon (about 2 tbsp)
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
For the Chicken
  • 1 lb chicken tenders
  • 2 tbsp fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper until well combined.
  2. Add the chicken tenders to the bowl and coat them evenly in the marinade. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).
Grilling
  1. Heat a grill or skillet over medium-high heat. If using a skillet, add a small drizzle of olive oil to prevent sticking.
  2. Remove chicken from the marinade and let the excess drip off. Cook for 5–7 minutes per side, or until golden brown and the internal temperature reaches 165°F (75°C).
  3. Let the chicken rest for a few minutes after cooking to lock in juices.
  4. Garnish with fresh chopped parsley and serve warm.
  5. Optional: Serve with tzatziki sauce for dipping!

Notes

Store cooked chicken in an airtight container for 3–4 days. For longer storage, freeze for up to 3 months. Pair with a variety of healthy sides for a balanced meal.
