Ingredients
  

For the chicken and marinade
  • 4 pieces Chicken breasts Lean and boneless
  • 2 tablespoons Olive oil For marinade
  • 2 tablespoons Lemon juice Freshly squeezed
  • 2 cloves Garlic Minced
  • 1 teaspoon Oregano Dried
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the tzatziki sauce
  • 1 cup Greek yogurt
  • 1/2 cup Cucumber Chopped
  • 1 clove Garlic Minced
  • 1 teaspoon Dill
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
For assembling the bowls
  • 2 cups Cooked rice or quinoa
  • 2 cups Fresh veggies Chopped cucumber, tomatoes, and red onion
  • 1/2 cup Feta cheese Optional topping

Method
 

Preparation
  1. Marinate the chicken breasts in olive oil, lemon juice, minced garlic, oregano, salt, and pepper for at least 30 minutes.
  2. In a bowl, prepare the tzatziki sauce by mixing Greek yogurt, chopped cucumber, minced garlic, dill, salt, and pepper.
  3. Cook rice or quinoa according to package instructions.
Cooking
  1. Grill the marinated chicken until cooked through and juices run clear.
Assembly
  1. Assemble the bowls by layering cooked rice or quinoa, sliced grilled chicken, fresh veggies, and a dollop of tzatziki sauce.
  2. Top with feta cheese if desired and serve.

Notes

For a gluten-free bowl, use quinoa or gluten-free rice. For a low-carb option, replace grains with cauliflower rice. Serve warm or cold, and adjust portion sizes for meal prep.
