Ingredients
  

Thyme Syrup
  • 1 cup water Used to make thyme syrup.
  • 1 tablespoon Stevia or sweetener/sugar of choice Adjust sweetness to taste.
  • 1/2 cup thyme Fresh thyme for infusion.
Mocktail Ingredients
  • 1/2 cup grapefruit juice Freshly squeezed for best flavor.
  • 1/3 cup soda water To add fizz.
  • Ice Ice For serving.
  • Extra thyme for garnish To enhance presentation.

Method
 

Make Thyme Syrup
  1. Combine the water and sweetener/sugar in a small saucepan over medium heat. Stir until dissolved.
  2. Add the thyme to the saucepan and let it simmer on low for about 10 minutes.
  3. Remove from heat and let it sit for at least 30 minutes to 3 hours to allow the thyme to infuse its flavor.
  4. Strain the syrup to remove the thyme leaves and allow it to cool.
Prepare Mocktail
  1. In a glass, add 1 tablespoon of the thyme syrup and 1/2 cup of grapefruit juice.
  2. Fill the glass with ice, top with soda water, and stir gently.
  3. Garnish with extra thyme and serve.

Notes

Best served fresh. Store thyme syrup in an airtight container in the refrigerator for up to two weeks. Enjoy the drink immediately after mixing to maintain its fizz.
