For the Salad

Method
 

Preparation
  1. Pat the chicken dry and rub it with olive oil, salt, pepper, smoked paprika, garlic powder, onion powder, and oregano.
Searing the Chicken
  1. Heat a large skillet over medium-high heat and sear the chicken for 5–6 minutes per side until golden and cooked to an internal temperature of 165°F.
  2. In the last minute, add butter and spoon it over the chicken to enhance the flavor.
  3. Let the chicken rest before slicing.
Roasting the Potatoes
  1. Preheat your oven to 425°F.
  2. Toss the diced potatoes with olive oil, salt, pepper, paprika, and thyme.
  3. Spread them out on a baking sheet and roast for 25–30 minutes until crispy on the outside and tender on the inside.
Preparing the Salad
  1. In a mixing bowl, toss romaine lettuce, cherry tomatoes, and optional red onion with the creamy dressing.
  2. Keep the salad chilled until serving for a fresh taste.
Serving
  1. Slice the rested chicken and serve it alongside the crispy potatoes and creamy salad.

Notes

For a healthier option, use an air fryer for the potatoes to reduce oil usage. Prepare a larger batch of chicken for meal prep. Store leftovers in separate airtight containers in the fridge.
