Ingredients
  

Main Ingredients
  • 2 cups gluten free old fashioned rolled oats
  • 1.5 cups oat milk
  • 0.25 cups coconut sugar
  • 2 tbsp vanilla protein (or 1/2 tsp vanilla extract)
  • 2 tbsp peanut butter
  • 1.5 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 tsp baking powder
For the Chia Blueberry Jam
  • 0.5 cups blueberries Fresh or frozen
  • 1 tbsp chia seeds
  • 2 tbsp water

Method
 

Preparation
  1. Blend all of the bread ingredients together until smooth.
  2. For the jam, add the blueberries, chia seeds, and water to a small pot. Heat over medium heat for about 7-8 minutes, mashing the blueberries until they thicken and become jam-like.
  3. Pour the blended oat mixture into a loaf pan lined with parchment paper and stir in the jam.
Baking
  1. Bake at 400F for 30-32 minutes.
Serving
  1. Drizzle some more peanut butter on top before serving.

Notes

This bread is great for meal prep because you can pull a single slice each day. Store bread in an airtight container or wrapped in foil at room temperature for up to 3 days. For longer life, refrigerate up to 7 days. To freeze, slice the loaf first and place slices in a freezer-safe bag with parchment between pieces. Freeze for up to 3 months.
