  • 1 medium red cabbage, shredded
  • 1 large apple, cubed (preferably Granny Smith)
  • 1 medium onion, finely chopped
  • 0.25 cup apple cider vinegar
  • 2 tbsp brown sugar can be reduced for a healthier version
  • 1 tbsp vegetable oil
  • 0.5 tsp salt to taste
  • 0.25 tsp pepper to taste
  • 2 whole cloves
  • 1 piece bay leaf

Method
 

Preparation
  1. Start by shredding the cabbage, chopping the onion, and cubing the apple.
Cooking
  1. In a Dutch oven over medium heat, add the vegetable oil.
  2. Add the chopped onion to the pot and sauté for 3-4 minutes until softened.
  3. Add the shredded cabbage and apple cubes to the pot, stirring to combine well.
  4. Pour in the apple cider vinegar, sprinkle in the brown sugar, and add the cloves and bay leaf.
  5. Cover the pot, reduce the heat, and let it simmer for 1-1.5 hours, stirring occasionally until the cabbage is tender.
  6. Once the cabbage is soft, remove the bay leaf and cloves, then season with salt and pepper to taste.

Notes

This dish can be stored in an airtight container in the refrigerator for up to a week, or frozen for up to three months.
