- Season the pork chops with salt and pepper on both sides.
- In a large oven-safe skillet, melt the butter over medium-high heat.
- Sear the pork chops for 2-3 minutes on each side until golden brown. Remove the chops and set them aside.
- In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes.
- Add the drained sauerkraut, sliced apples, brown sugar, and caraway seeds (if using) to the skillet, stirring to combine.
- Nestle the pork chops back into the sauerkraut mixture, ensuring they are partially covered.
- Cover the skillet and bake in a preheated oven at 350°F (175°C) for 45-55 minutes, or until the pork chops are cooked through and tender.
- Garnish with fresh parsley if desired, and serve warm.
