Preparation
  1. In a bowl, mix together the Parmesan cheese, heavy cream, minced garlic, Italian seasoning, salt, and pepper to make the sauce.
  2. Place the diced potatoes at the bottom of the crockpot.
  3. Lay the chicken breasts on top of the potatoes.
  4. Pour the garlic Parmesan sauce over the chicken and potatoes, ensuring each piece of chicken is well coated.
  5. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  6. Garnish with chopped parsley before serving.

Notes

For a lighter option, consider using half-and-half instead of heavy cream. Store leftovers in an airtight container for up to 4 days. This dish is also suitable for meal prep.
