Method
 

Preparation
  1. Season the chicken drumsticks with olive oil and sprinkle on minced garlic, dried oregano, dried parsley, paprika, salt, and black pepper.
Cooking the Chicken
  1. Place the seasoned chicken on a baking sheet and roast in an oven preheated to 400°F for 35-40 minutes until golden brown and juicy.
Making the Mashed Potatoes
  1. Boil peeled and cubed potatoes in a large pot until tender, about 15-20 minutes. Drain water, then mash with butter and milk until creamy.
Cooking the Carrots
  1. In the last few minutes of the chicken's baking time, cook the baby carrots in a pan with butter, minced garlic, and fresh parsley until glazed and tender.
Assembly
  1. Assemble the plate with a scoop of mashed potatoes, garlic herb chicken, and glazed carrots. Optionally, spoon extra garlic butter over the chicken.

Notes

Leftovers can be stored in an airtight container for up to 3 days. For a lighter option, substitute some butter with olive oil and use low-fat milk instead of whole milk. Consider adding a side salad or other roasted vegetables for extra nutrition.
