Preparation
- Season the chicken drumsticks with olive oil and sprinkle on minced garlic, dried oregano, dried parsley, paprika, salt, and black pepper.
Cooking the Chicken
- Place the seasoned chicken on a baking sheet and roast in an oven preheated to 400°F for 35-40 minutes until golden brown and juicy.
Making the Mashed Potatoes
- Boil peeled and cubed potatoes in a large pot until tender, about 15-20 minutes. Drain water, then mash with butter and milk until creamy.
Cooking the Carrots
- In the last few minutes of the chicken's baking time, cook the baby carrots in a pan with butter, minced garlic, and fresh parsley until glazed and tender.
Assembly
- Assemble the plate with a scoop of mashed potatoes, garlic herb chicken, and glazed carrots. Optionally, spoon extra garlic butter over the chicken.
Notes
Leftovers can be stored in an airtight container for up to 3 days. For a lighter option, substitute some butter with olive oil and use low-fat milk instead of whole milk. Consider adding a side salad or other roasted vegetables for extra nutrition.
