Method
Roasting the Potatoes
- Preheat your oven to 400°F. In a bowl, toss the halved baby gold potatoes with 2 tablespoons of olive oil, salt, and pepper.
- Spread them evenly on a baking sheet and roast for 25–30 minutes until they are fork-tender and golden brown.
Preparing the Green Beans
- While the potatoes are roasting, steam or sauté the fresh green beans in a separate pan until bright green and tender-crisp, about 5–7 minutes.
- Lightly season them with salt and set aside.
Searing the Steak Bites
- In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat.
- Season the steak cubes with salt, black pepper, and smoked paprika.
- Add them to the skillet in a single layer and sear for 2–3 minutes per side until browned and caramelized.
- Remove the steak bites from the skillet and set aside.
Cooking the Shrimp
- In the same skillet, melt the unsalted butter over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Then, add the shrimp and cook them for 1-2 minutes per side until they turn pink and opaque.
- Finish with the juice of half a lemon and sprinkle chopped parsley over the top.
Combining and Serving
- Return the steak bites to the skillet, spoon the garlic butter sauce over everything, and toss gently to combine.
- Plate your delicious steak bites and shrimp with the roasted baby potatoes and steamed green beans.
- Drizzle any extra garlic butter sauce on top for added flavor.
Notes
This dish is great for meal prep. Store leftovers in an airtight container for up to 3 days. You can also switch up the vegetables for different flavors. For a lower fat option, use less butter or substitute with coconut oil.
