  • 1.5 lbs beef stew meat, cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup beef broth

Method
 

Preparation
  1. In a large bowl, combine the beef stew meat, garlic, melted butter, salt, pepper, thyme, and rosemary. Stir until the beef is well coated.
  2. Add the halved baby potatoes to the slow cooker.
  3. Pour the beef mixture over the potatoes and add the beef broth.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender and the potatoes are cooked through.
Serving
  1. Serve warm right from the slow cooker. Scoop the beef and potatoes onto plates and spoon some of the sauce over the top.

Notes

For a fuller meal, serve with warm bread to soak up the garlic butter sauce. This dish also pairs well with plain rice or buttered noodles.
