Preparation
- In a large bowl, combine the beef stew meat, garlic, melted butter, salt, pepper, thyme, and rosemary. Stir until the beef is well coated.
- Add the halved baby potatoes to the slow cooker.
- Pour the beef mixture over the potatoes and add the beef broth.
Cooking
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender and the potatoes are cooked through.
Serving
- Serve warm right from the slow cooker. Scoop the beef and potatoes onto plates and spoon some of the sauce over the top.
Notes
For a fuller meal, serve with warm bread to soak up the garlic butter sauce. This dish also pairs well with plain rice or buttered noodles.
