Preparation
- In a large mixing bowl, combine the flour and granulated sugar together with a whisk. Slowly whisk in the baking powder and baking soda.
- Next, slowly add in the buttermilk while whisking gently. Then add each egg one at a time, whisking after each addition until the mixture is smooth.
- Add the oil to the batter and stir until everything is combined.
Cooking
- Preheat your griddle or skillet over medium heat. Pour 1/4 cup of the batter onto the hot surface for each pancake.
- Sprinkle funfetti sprinkles on top of each pancake while the batter is still wet. Cook for about 2-3 minutes until bubbles form on the surface.
- Flip the pancakes and cook for an additional 1-2 minutes until golden brown.
Serving
- Serve the pancakes warm with your favorite toppings like maple syrup, fresh fruit, or yogurt.
- Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to 6 months.
Notes
For a heart-healthy option, use whole wheat flour instead of all-purpose flour. To reduce sugar, consider using a sugar substitute. Leftover pancakes can be reheated in the toaster.
