  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon salt
Frosting Ingredients
  • 1/4 cup powdered sugar for frosting
  • 1/2 cup unsalted butter for frosting
  • 2 cups powdered sugar for frosting
  • 1 tablespoon vanilla extract for frosting
  • as needed milk for frosting, as needed

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). In a small bowl, stir together flour, baking soda, and baking powder; set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in the egg, vanilla extract, and almond extract. Gradually blend in the dry ingredients.
  3. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets. Flatten each ball slightly with the bottom of a glass.
Baking
  1. Bake for 8 to 10 minutes in the preheated oven, or until golden. Allow cookies to cool completely on wire racks.
Frosting
  1. To make the frosting, beat together the butter and powdered sugar until smooth. Mix in vanilla extract and add milk as needed to reach the desired consistency.
  2. Ice the cooled cookies with buttercream and enjoy!

Notes

These cookies can be made healthier by substituting alternative flours or reducing sugar. Store in an airtight container for up to a week or freeze for longer storage.
