  • 10 pods okra, sliced in 1/4 inch pieces
  • 1 large egg, beaten
  • 1 cup cornmeal
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup vegetable oil For frying

Preparation
  1. Soak the sliced okra in the beaten egg in a small bowl for about 5 to 10 minutes.
  2. In a medium bowl, combine the cornmeal, salt, and pepper. Mix well.
Cooking
  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Carefully dredge the soaked okra pieces in the cornmeal mixture.
  3. Once the oil is hot, place the coated okra into the skillet. Stir continuously to fry evenly.
  4. Reduce the heat to medium when the okra begins to brown and continue to cook until golden brown and crispy.
  5. Remove the fried okra from the skillet and drain on paper towels.
  6. Serve hot and enjoy!

Notes

For a healthier option, consider using whole wheat flour instead of cornmeal. You can also air fry the okra at 400°F for 10-12 minutes for a lighter version.
