Fragrant Spaghetti

Ingredients
  

Pasta and toppings
  • 1 LB thick spaghetti
  • 1/2 CUP Grana Padano cheese, grated
Breadcrumbs
  • 4 OZ homestyle bread (any crusty bread)
  • 2 OZ mixed herbs (thyme, wild fennel, rosemary, mint, parsley, marjoram) Chopped together for breadcrumbs
  • 1 LEMON lemon For squeezing juice
Flavoring
  • 2 EA bay leaves To be added to boiling water
  • 1/2 CUP extra-virgin olive oil Used for flavored oil and breadcrumbs
  • to taste Salt

Method
 

Prepare Breadcrumbs
  1. Chop the mixed herbs together.
  2. Heat the bread in a pan with a drizzle of oil and squeeze a bit of lemon juice on top.
  3. Remove the bread from the pan, season with about 1 oz. chopped herbs and 2 Tbsp. oil, and blend everything together.
Cook Pasta
  1. Bring a pot of water to a boil with a large pinch of salt, 2 bay leaves, and a pinch of chopped herbs.
  2. Cook the pasta in the fragrant water until al dente.
Prepare Flavored Oil
  1. Add the remaining chopped herbs and a squeeze of lemon juice to 1/2 cup oil.
Combine and Serve
  1. Strain the pasta, reserving a bit of the pasta cooking water, and transfer it back to the pot.
  2. Toss with the flavored oil, breadcrumbs with herbs, Grana Padano cheese, and a bit of the cooking water.
  3. Cook for 30 seconds and serve.

Notes

Leftover Fragrant Spaghetti can be stored in an airtight container in the refrigerator for up to three days or frozen for up to three months. Reheat gently with a splash of water or olive oil.
