Method
Preparation
- Begin by gathering all your ingredients and equipment. Measure out the flour, baking powder, sugar, and any optional ingredients.
- Cook the bacon in a skillet over medium heat until desired crispiness, then set aside on paper towels.
Mixing the Batter
- In a large mixing bowl, combine the flour, baking powder, sugar, and salt. Whisk until even.
- In a separate bowl, combine the milk, egg, melted butter, vanilla extract, and cinnamon (if using). Whisk until smooth.
- Pour the wet mixture into the dry ingredients, stirring gently. Do not overmix; a few lumps are okay.
Cooking
- Preheat a griddle or non-stick skillet over medium heat. Test if ready by sprinkling water—if it sizzles, you're good!
- Using a 1/4 cup measuring cup, pour batter onto the griddle, ensuring space between pancakes.
- Cook for 2-3 minutes until bubbles form and edges look set, then flip and cook for another minute until golden brown.
Serving
- Stack the pancakes on a plate and crumble the crispy bacon on top. Serve with syrup, honey, or fresh fruit.
Notes
For a healthier version, use whole grain flour. These pancakes freeze well; cool them first, stack with parchment paper, and store in a zip-top bag.
