Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix together the flour, baking powder, salt, and cinnamon.
- In another bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
- Gradually fold the wet ingredients into the dry ingredients until a dough forms.
- On a floured surface, roll out the dough into a rectangle.
- Sprinkle with additional cinnamon and sweetener, then roll it tightly into a log.
- Cut the log into equal pieces and place them onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
For best flavor, serve fresh out of the oven. Consider cutting each roll in half for portion control. Store in an airtight container at room temperature for up to 2 days. Freeze for longer storage, wrapping each roll well.
