Easy Spinach Pie

Ingredients
  

For the filling
  • 2 packages 10 ounce packages frozen chopped spinach, thawed and well drained
  • 0.5 cup crumbled feta cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 0.5 teaspoon salt
For the pastry
  • 1 package 16 ounce whole wheat phyllo dough
  • 0.5 cup unsalted butter, melted for brushing

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Lightly grease a baking sheet.
  2. In a mixing bowl, mix the thawed spinach, feta cheese, mozzarella cheese, Parmesan cheese, minced garlic, and salt.
  3. Arrange one sheet of phyllo dough on a clean surface and brush with melted butter. Cover the remaining phyllo with a damp towel.
  4. Place a second sheet of phyllo on top and brush with butter, then place a third sheet on top.
  5. Cut the buttered phyllo lengthwise into four strips.
  6. Place about 1 tablespoon of the spinach mixture at the bottom of each strip.
  7. Fold the bottom right corner over the filling to form a triangle, then fold the bottom left corner up to make another triangle. Continue folding until all the dough is folded.
  8. Arrange the stuffed triangles seam-side down on the prepared baking sheet and lightly brush with butter.
Baking
  1. Bake the triangles in the preheated oven until golden brown, about 20 minutes.
  2. Cool slightly before serving. You can freeze half of the triangles for later by freezing them on the baking sheet for 1 hour, then placing in a resealable bag.

Notes

For a healthier option, use low-fat cheeses and reduce the butter. Can be made gluten-free using gluten-free phyllo or crustless cups. Great for meal prep, can be frozen and baked directly from the freezer.
