- Wash and chop all your ingredients - dice the chicken breasts, chop the bell peppers and onions, and mince the garlic.
Cooking
- Heat a skillet on medium heat and add a tablespoon of olive oil.
- Add the diced chicken to the skillet, season with salt, pepper, cumin, chili powder, and paprika, and cook for 5-7 minutes until browned and cooked through.
- Add the chopped bell peppers, onion, and minced garlic to the skillet and cook for another 5-7 minutes until the vegetables are tender but still crisp.
- Remove the skillet from the heat and squeeze fresh lime juice over the mixture, then sprinkle with chopped cilantro.
Serving
- Serve warm on its own or with a side of brown rice or quinoa.
Notes
