Preparation
- Boil 1 cup of water in a saucepan over medium heat and add the crushed ginger to infuse flavors.
- Use a mortar and pestle to crush the cinnamon stick, cloves, fennel seeds, cardamom pods, and black peppercorns into a fine powder.
Brewing
- Once the water is boiling, add the 4 teaspoons of tea leaves and sugar. Let steep for 1-2 minutes.
- Add 1 cup of whole milk to the mixture and bring to a gentle boil.
Final Mixing
- After boiling, stir in the previously crushed spice mix and let simmer for 30 seconds.
- Strain the chai into cups using a fine-mesh strainer and add saffron if desired.
Notes
For lighter options, substitute whole milk with almond or oat milk. You can also prepare the spice mix in advance for quicker preparation.
