Preparation
- Slice the unpeeled ginger into rounds about 4-5 millimeters thick.
- Heat ginger, water, and monk fruit sweetener in a medium saucepan over medium heat, stirring occasionally.
- Bring to a gentle simmer. Turn the heat to low, cover, and leave to infuse for 10-15 minutes.
- Remove from heat and leave to infuse for a further 15-30 minutes.
- Remove the ginger and add the lemon juice to the saucepan. Give it a gentle stir.
- Refrigerate for at least an hour, then serve over ice.
Notes
Store in a closed pitcher for up to 5 days. Freeze in ice cube trays for longer storage.
