Ingredients
  

For the Cherry Filling
  • 2 cups fresh or frozen cherries Pitted if using fresh.
  • 1 cup granulated sugar Adjust to taste.
  • 1 tablespoon cornstarch Can substitute with tapioca starch.
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
For the Crumb Topping
  • 1 tablespoon unsalted butter For mixing.
  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ teaspoon cinnamon (optional) For extra flavor.
  • ½ cup cold butter, cubed Use cold for a crumbly texture.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla extract. Toss gently and pour into a pie dish.
  3. In another bowl, mix flour, oats, brown sugar, and cinnamon. Add cold, cubed butter and mix until crumbly.
Baking
  1. Sprinkle crumb mixture over cherry filling, dot with butter.
  2. Bake for 45-50 minutes until topping is golden brown and filling is bubbling.
  3. Cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. You can also store in the fridge or freeze for later.
