  1. In a large pot, heat olive oil over medium heat. Add chopped onion and ground beef; cook until the beef is browned and the onion is translucent.
  2. Stir in the diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Add milk and shredded cheddar cheese to the pot, stirring until cheese has melted and soup is creamy.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with green onions if desired.

Notes

For best results, brown the beef well and stir cheese in small amounts, allowing adequate time for melting. If the soup thickens too much, add more milk or broth. Label containers when storing for easy identification.
