Method
Cooking the Beef
- Heat a large skillet over medium heat.
- Add the ground beef and cook until browned, about 5 to 7 minutes, breaking it up into small pieces.
- Once browned, drain any excess fat.
Flavoring the Beef
- Sprinkle the taco seasoning over the cooked beef and stir well to combine.
- Let it cook for an additional 2 minutes.
Assembling the Quesadilla
- Remove the beef mixture from the skillet and set aside.
- In the same skillet, place one tortilla and sprinkle half of the shredded cheese on one half.
- Add a portion of the beef on top of the cheese, then finish with more shredded cheese before folding the tortilla.
Cooking the Quesadilla
- Brush the skillet lightly with cooking oil and cook the quesadilla for about 2-3 minutes on each side until golden brown and cheese is melted.
Serving
- Slice the quesadillas into wedges and serve warm with optional toppings.
Notes
For a healthier version, substitute ground beef with lean turkey or black beans. Great for meal prep and can be stored in the fridge for up to three days. Consider adding veggies like bell peppers or spinach for extra nutrients.
