Ingredients
  

Flatbread Ingredients
  • 2 pieces flatbreads Use any type of flatbread
  • 1 cup cherry tomatoes, halved Fresh cherry tomatoes work best
  • 1 cup fresh mozzarella, sliced Can substitute with other cheeses as desired
  • 1/4 cup fresh basil leaves, chopped Use more for garnish if desired
  • 2 tbsp balsamic glaze For drizzling on top
  • 1 tbsp olive oil For brushing the flatbreads
  • 2 tbsp fresh parmesan cheese Optional topping
  • Salt and black pepper to taste Use to season as desired

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the flatbreads on a baking sheet and brush them lightly with olive oil.
  3. Top each flatbread with equal amounts of sliced mozzarella and halved cherry tomatoes.
  4. Sprinkle the chopped basil leaves over the top of the mozzarella and tomatoes.
  5. Season with salt and black pepper to taste.
Baking
  1. Bake the flatbreads for 8-10 minutes, or until the cheese is melted and the edges of the flatbread are crispy.
  2. Remove from oven and allow to cool for a few minutes.
  3. Drizzle the balsamic glaze over the top of the flatbreads.
  4. Cut into slices and serve hot.

Notes

For a healthier meal, serve with a side salad. Leftovers can be stored in an airtight container for up to three days.
