Preparation
- Preheat your oven to 170°C (340°F).
- Lightly grease and line your loaf pan with baking spray or butter and baking paper.
- Peel and mash the bananas in a large mixing bowl.
- Add melted butter to the bananas and stir, then mix in sugar, beaten egg, and vanilla extract.
- In a separate bowl, sift together flour, baking powder, baking soda, salt, and cinnamon.
Baking
- Gradually pour the dry mixture over the banana mixture, stirring gently until combined.
- Fold in walnuts or chocolate chips if using.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 45-50 minutes, or until a skewer inserted into the center comes out clean.
Cooling
- Remove the cake from the oven and let it rest in the loaf pan for 5 minutes.
- Transfer to a wire rack to cool completely.
Notes
Store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator. Freezes up to 3 months.
