Easiest Ever Crockpot Lasagna

Ingredients
  

For the sauce
  • 1 lb Extra-Lean Ground Beef Great source of protein while keeping calories lower.
  • 1 medium Yellow Onion, Diced Adds sweetness and flavor to the meat sauce.
  • 2 cloves Garlic, Minced Enhances flavor and provides health benefits.
  • 0.5 tsp Salt Can adjust according to taste.
  • 0.5 tsp Pepper Can adjust according to taste.
  • 2 jars Tomato Sauce (650mL) Opt for lower-sugar or low-sodium varieties.
For the lasagna layers
  • 1 lb Lasagna Noodles Oven-ready or regular noodles; gluten-free option available.
  • 1 tub (475g) Ricotta Cheese Choose a lower-fat version for a lighter dish.
  • 2 cups Mozzarella Cheese Low-fat mozzarella can be used.
  • 0.5 cup Water Helps create steam during cooking.
For garnish
  • to taste Chopped Fresh Basil or Parsley Adds flavor and color.

Method
 

Preparation
  1. In a large frying pan, heat a drizzle of cooking spray over medium-high heat. Add ground beef and break into smaller pieces as it cooks.
  2. When the beef is almost fully cooked, add diced onions and minced garlic. Season with salt and pepper. Sauté until the onions are translucent.
  3. Stir in one jar of tomato sauce, let it simmer for a minute.
  4. Spray the inside of the slow cooker with cooking spray and layer some meat sauce at the bottom.
Assembly
  1. Layer uncooked lasagna noodles on top of the sauce, breaking them if necessary.
  2. Add dollops of ricotta cheese and sprinkle with mozzarella. Repeat layers until filled.
  3. Pour the second jar of tomato sauce on the top layer and add more mozzarella cheese.
Cooking
  1. Pour water around the edges of the lasagna.
  2. Cover and cook on high for 3 hours or low for 6 hours until bubbly.
Serving
  1. Once cooked, remove the lid and garnish with fresh herbs.
  2. Serve hot and enjoy!

Notes

This recipe is great for meal prep. Make it in advance and reheat during the week. Store leftovers in an airtight container for 3-4 days or freeze portions.
