- Muddle the base ingredients: Place dragonfruit, chopped lime, and sugar into a tall glass. Use a muddler to press down and muddle the ingredients until the juices have released.
- Add the mint: Clap the mint leaves together in your hands to release some of the oils. Add them to the glass, pressing down gently with the muddler again.
- Add ice: Fill the glass with ice cubes to chill the drink.
- Mix in the rum: Add non-alcoholic rum if desired.
- Top it off: Pour soda water over the ice to give the drink a bubbly finish.
- Stir gently: Using a spoon, stir gently to combine all the ingredients.
- Garnish: Add extra dragonfruit slices, mint leaves, and a wedge of lime for decoration.
- Serve in batches: If making multiple servings, muddle ingredients in a pitcher first, then add ice, rum, and soda water, and serve over ice.
Notes
Best enjoyed fresh; store any leftovers in the refrigerator for up to 24 hours.
