Ingredients
  

Dry Ingredients
  • 1.5 cups all purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
Wet Ingredients
  • 0.5 cups unsalted butter, softened but still cool
  • 0.5 cups granulated sugar
  • 0.33 cups brown sugar, lightly packed
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
Mix-ins
  • 0.75 cups Easter/spring M&M's
  • 0.5 cups white chocolate chips or chunks
  • 0.25 cups pastel sprinkles

Method
 

Preparation
  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugars until light and fluffy.
  4. Add egg and vanilla extract, mixing until combined.
  5. On low speed, add in flour mixture and mix until just combined.
  6. Gently stir in M&M's and white chocolate chips.
  7. Scoop dough, press into sprinkles, and place on baking sheets.
Baking
  1. Bake for 8-11 minutes until edges are set.
  2. Cool on wire racks.

Notes

For healthier options, consider using whole wheat flour and reducing sugar. Store cookies in an airtight container at room temperature for up to 4 days, or freeze for longer storage.
