  • 2 large large cucumbers Fresh cucumbers, sliced
  • 1 cup cherry tomatoes Halved
  • 8 ounces fresh mozzarella cheese Torn into bite-sized pieces
  • 1/4 cup fresh basil leaves Torn
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. Slice the cucumbers into rounds and arrange them on a serving platter.
  2. Halve the cherry tomatoes and add them to the platter.
  3. Tear the mozzarella cheese into bite-sized pieces and distribute them evenly.
  4. Sprinkle fresh basil leaves over the salad.
  5. Drizzle olive oil and balsamic vinegar over the top.
  6. Season with salt and pepper to taste.
  7. Toss gently before serving.

Notes

Best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to two days. Avoid freezing as fresh ingredients lose texture.
