Method
 

Preparation of Potatoes
  1. Heat olive oil in a skillet over medium heat. Add diced potatoes, minced garlic, salt, pepper, and paprika. Cook for about 12–15 minutes, stirring occasionally, until golden and crispy.
Cooking the Sausages
  1. In the same skillet, add breakfast sausages. Cook over medium heat for 6–8 minutes, turning occasionally, until browned and juicy.
Scrambling the Eggs
  1. In a mixing bowl, whisk eggs with milk, salt, and pepper. In another skillet, melt butter over medium-low heat. Add egg mixture and scramble until soft and creamy.
Toasting the Croissant
  1. Slice the croissant in half and toast in the oven or on a skillet for 2–3 minutes until lightly crisp outside and soft inside.
Assembling the Dish
  1. Arrange scrambled eggs, sausages, and crispy potatoes on a plate. Place toasted croissant on the side and sprinkle fresh parsley and a pinch of paprika over the eggs.

Notes

This dish is great for meal prep! Prepare the potatoes and sausage in advance and store them in the fridge. Reheat them in the morning and scramble fresh eggs to save time. Store leftovers in an airtight container in the refrigerator for up to 2 days.
