Preparation
- Place the chicken breasts at the bottom of the crockpot.
- Add the corn, black beans, diced tomatoes, onion, garlic, cumin, chili powder, salt, and pepper.
- Pour enough chicken broth over the ingredients to cover them.
- Cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the cream cheese and stir until melted and combined.
- Shred the chicken in the pot and stir everything together.
- Serve warm and enjoy!
Notes
You can serve with toppings like shredded cheese, sour cream, jalapeƱos, cilantro, avocado, and lime wedges. Store leftovers in an airtight container for 3-4 days or freeze for 2-3 months.
