  • 2 pieces boneless skinless chicken breasts
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 8 oz cream cheese
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the corn, black beans, diced tomatoes, onion, garlic, cumin, chili powder, salt, and pepper.
  3. Pour enough chicken broth over the ingredients to cover them.
  4. Cook on low for 6-7 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, add the cream cheese and stir until melted and combined.
  6. Shred the chicken in the pot and stir everything together.
  7. Serve warm and enjoy!

Notes

You can serve with toppings like shredded cheese, sour cream, jalapeƱos, cilantro, avocado, and lime wedges. Store leftovers in an airtight container for 3-4 days or freeze for 2-3 months.
