  • 1 cup grated Parmesan cheese Freshly grated preferred
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano

Method
 

Preparation
  1. Wash and halve the baby potatoes.
  2. In a large bowl, combine olive oil, Parmesan cheese, minced garlic, oregano, salt, and pepper.
  3. Add the potatoes to the bowl and toss until they are well coated.
Cooking
  1. Transfer the potatoes to the crockpot and spread them out evenly.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and golden.
  3. Garnish with chopped parsley before serving.

Notes

Serve the potatoes hot straight from the crockpot, using a slotted spoon. Pair with roasted meats, grilled fish, or soups. For extra flavor, a sprinkle of fresh lemon juice is suggested.
