Ingredients
  

Meatball Mixture
  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
Layer Ingredients
  • 1 large onion, sliced
  • 1 cup beef broth
  • 1 cup French onion soup

Method
 

Preparation
  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper. Form into meatballs.
  2. Place sliced onions at the bottom of the crockpot.
  3. Arrange meatballs on top of the onions.
  4. Pour beef broth and French onion soup over the meatballs.
  5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  6. Serve warm, garnished with additional parsley if desired.

Notes

Serve these meatballs warm over rice, mashed potatoes, or in a sandwich. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
