- In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper. Form into meatballs.
- Place sliced onions at the bottom of the crockpot.
- Arrange meatballs on top of the onions.
- Pour beef broth and French onion soup over the meatballs.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
- Serve warm, garnished with additional parsley if desired.
Notes
Serve these meatballs warm over rice, mashed potatoes, or in a sandwich. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
