- In a large bowl, mix together the diced potatoes, sliced kielbasa, cream of chicken soup, sour cream, and diced onion.
- Season with salt and pepper to taste.
- Transfer the mixture to a crockpot and sprinkle the shredded cheddar cheese on top.
Cooking
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
- Once done, give it a good stir and serve hot, garnished with chives or green onions if desired.
Notes
You can prepare this dish ahead of time. Chop the potatoes and kielbasa a day before and store them in the fridge. Layer everything in the crockpot the night before, cover, and keep it in the fridge.
