Preparation
  1. In a large bowl, mix together the diced potatoes, sliced kielbasa, cream of chicken soup, sour cream, and diced onion.
  2. Season with salt and pepper to taste.
  3. Transfer the mixture to a crockpot and sprinkle the shredded cheddar cheese on top.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
  2. Once done, give it a good stir and serve hot, garnished with chives or green onions if desired.

Notes

You can prepare this dish ahead of time. Chop the potatoes and kielbasa a day before and store them in the fridge. Layer everything in the crockpot the night before, cover, and keep it in the fridge.
