  • 2 tablespoons butter
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt (to taste)
  • Pepper (to taste)
  • Fresh herbs (optional, for garnish)

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the carrots, then place them on a baking sheet.
  3. Drizzle with olive oil, and season with salt and pepper.
Roasting
  1. Roast the carrots for about 25-30 minutes until fork-tender.
  2. Remove from the oven and gently smash each carrot with a fork or the bottom of a glass.
Finishing Touch
  1. Add butter and minced garlic on top, then return to the oven for another 10-15 minutes until crispy.
  2. Garnish with fresh herbs if desired and serve hot.

Notes

To store leftover crispy smashed carrots, allow them to cool completely and place them in an airtight container. They can stay in the fridge for about 3-5 days. If you want to freeze them, place the carrots in a freezer-safe bag and store them for up to 2 months. When ready to use, thaw them overnight in the fridge. You can reheat them in the oven to restore their crispiness.
