Method
 

Preparation
  1. In a mixing bowl, combine the olive oil, paprika, garlic powder, onion powder, thyme, salt, and black pepper. Rub this mixture generously over the chicken leg quarters. Let the chicken rest for about 20 minutes.
  2. Cut the russet potatoes into thin strips. In another mixing bowl, toss the fries with olive oil, paprika, salt, and black pepper.
Baking
  1. Preheat your oven to 425°F (220°C). Spread the seasoned fries on a baking tray, placing the chicken leg quarters on the same tray if space allows.
  2. Roast them in the oven for 40-45 minutes, or until the chicken is crispy and cooked through, and the fries are browned.
Making the Dipping Sauce
  1. In a small bowl, mix together ketchup, honey, and smoked paprika to prepare the dipping sauce.

  1. Serve the roasted chicken with the homemade fries and the dipping sauce.
