Ingredients
  

Main ingredients
  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 4 cups fresh spinach (about 120 g)
  • 4 ounces feta cheese, crumbled (about 115 g)
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 teaspoon red pepper flakes (optional, for heat)

Method
 

Boil the Gnocchi
  1. Bring a large pot of salted water to a boil.
  2. Add the gnocchi to the boiling water and cook according to the package instructions, usually until they float to the surface after about 2-3 minutes.
  3. Use a slotted spoon to remove the gnocchi from the water and allow them to drain in a bowl.
Fry the Gnocchi
  1. In a large frying pan, heat the olive oil over medium-high heat.
  2. Once the oil is hot, add the cooked gnocchi to the pan.
  3. Cook them undisturbed for about 2-3 minutes until they turn golden brown and crispy on one side.
Cook All Sides
  1. Gently stir the gnocchi to turn them over and cook for another 2-3 minutes until they are crispy on all sides.
Add Garlic
  1. Reduce the heat to medium and add the minced garlic to the pan.
  2. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
Add Spinach
  1. Add the fresh spinach to the pan and stir gently.
  2. Cook until the spinach wilts, about 2-3 minutes.
Season the Dish
  1. Season the mixture with salt, black pepper, and red pepper flakes if desired.
  2. Remove the pan from heat.
Add Feta
  1. Stir in the crumbled feta cheese, letting it mix with the other ingredients.
  2. Serve immediately on plates.

Notes

For storage, leftovers can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of water or olive oil to help revitalize the dish. Can also be frozen for up to 1 month.
