Ingredients
Method
Marinating and Coating
- Soak the chicken drumsticks in buttermilk for at least 30 minutes to tenderize and infuse flavor.
- In a mixing bowl, combine flour, paprika, garlic powder, salt, black pepper, and thyme. Remove the chicken from the buttermilk and coat each drumstick with the flour mixture.
Frying the Chicken
- Heat oil in a deep frying pan to 350°F (175°C). Carefully add coated chicken drumsticks and fry for 12–15 minutes until golden brown and cooked through.
Roasting the Potatoes
- Toss potato wedges with olive oil, paprika, salt, and black pepper. Spread on a baking sheet and roast at 425°F (220°C) for 25–30 minutes, flipping halfway through.
Preparing the Salad
- Mix chopped lettuce, cucumber, cherry tomatoes, and red onion in a bowl. Drizzle with light vinaigrette or lemon juice to taste.
Serving
- Serve the fried chicken alongside the roasted potatoes and fresh garden salad.
Notes
Consider using an air fryer for a healthier version of fried chicken. Store leftovers in an airtight container for up to 3 days and reheat in the oven to maintain crispiness. Variations in the salad can include additional vegetables or beans.
