  • 2 cups Lettuce For a fresh salad.
  • 1/2 cucumber (sliced)
  • 1/2 cup Cherry Tomatoes (halved)
  • 1/4 red onion (thinly sliced)
  • 1 tablespoon Olive Oil For salad dressing.
  • 1 tablespoon Lemon Juice For salad dressing.
  • 1 teaspoon Oregano For seasoning the potato wedges.

Method

Marinate the Chicken
  1. Place the chicken drumsticks in a large mixing bowl. Add 2 cups of buttermilk along with 1 teaspoon of salt and a little black pepper. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare the Crispy Coating
  1. In another bowl, mix together 2 cups of all-purpose flour, 1 tablespoon of paprika, 1 teaspoon each of garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Remove the drumsticks from buttermilk and coat them in the flour mixture.
Fry the Drumsticks
  1. Heat your frying oil in a deep pan to 350°F (175°C). Carefully place the coated drumsticks into the hot oil and fry for 12–15 minutes until golden brown and cooked through.
Roast the Potato Wedges
  1. Preheat your oven to 425°F (220°C). Toss the potato wedges with olive oil, paprika, oregano, salt, and pepper. Spread on a baking sheet and roast for 30–35 minutes, turning halfway through.
Plate & Serve
  1. Arrange the crispy chicken drumsticks with the roasted potato wedges and a fresh salad on the side.

Notes

For extra crispiness, consider double coating the drumsticks. Leftovers last 3-4 days and can be reheated in an air fryer. Meal prepping is a great option for quick dinners. Air frying is a healthier alternative to frying.
