Method
Marinate the Chicken
- Place the chicken drumsticks in a large mixing bowl. Add 2 cups of buttermilk along with 1 teaspoon of salt and a little black pepper. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare the Crispy Coating
- In another bowl, mix together 2 cups of all-purpose flour, 1 tablespoon of paprika, 1 teaspoon each of garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Remove the drumsticks from buttermilk and coat them in the flour mixture.
Fry the Drumsticks
- Heat your frying oil in a deep pan to 350°F (175°C). Carefully place the coated drumsticks into the hot oil and fry for 12–15 minutes until golden brown and cooked through.
Roast the Potato Wedges
- Preheat your oven to 425°F (220°C). Toss the potato wedges with olive oil, paprika, oregano, salt, and pepper. Spread on a baking sheet and roast for 30–35 minutes, turning halfway through.
Plate & Serve
- Arrange the crispy chicken drumsticks with the roasted potato wedges and a fresh salad on the side.
Notes
For extra crispiness, consider double coating the drumsticks. Leftovers last 3-4 days and can be reheated in an air fryer. Meal prepping is a great option for quick dinners. Air frying is a healthier alternative to frying.
