  • 1 head cauliflower Cut into thick 'steaks'
  • 4-5 tablespoons olive oil For drizzling and sautéing onions

  • Pepper to taste Pepper
  • 2-3 onions onions Sliced lengthwise
  • 1-1½ tablespoons balsamic vinegar For caramelizing onions
  • ½-1 cup grated cheese Your choice of cheese

Method
 

Preparation
  1. Slice the cauliflower into 1-inch thick 'steak' pieces.
  2. Drizzle both sides with olive oil and season with salt and pepper.
Baking the Cauliflower
  1. Preheat your oven to 350°F.
  2. Place the cauliflower steaks on a baking sheet and bake for 25-30 minutes, or until crispy and charred on the edges.
Preparing Caramelized Onions
  1. In a pan over medium heat, heat olive oil.
  2. Add onions and cook until soft and starting to brown, stirring often.
  3. Stir in balsamic vinegar and pepper to taste. Remove from heat.
Assembly
  1. Spoon the caramelized onions over the baked cauliflower steaks.
  2. Grate and sprinkle cheese generously over the onions.
  3. Return to the oven and bake until the cheese is melted and bubbly.

Notes

For meal prep, you can roast the steaks ahead and reheat them, adding fresh onions and cheese before serving. Leftovers keep well in the fridge or can be frozen for up to 2 months without the cheese and onions.
