- Slice each chicken breast horizontally and pound to a thickness of about 1/2 inch. Season both sides with salt, pepper, paprika, and garlic powder.
- Set up a breading station with flour, beaten eggs, and Panko breadcrumbs.
Cooking the Chicken
- Dredge each chicken cutlet in flour, dip into the beaten eggs, then coat with Panko. Ensure a thick layer.
- Heat oil in a skillet until it reaches 350-375°F. Fry chicken for 4-6 minutes on each side until golden brown and cooked through. Drain on a wire rack.
Making the Alfredo Sauce
- In the same skillet, lower heat to medium-low and melt butter. Add minced garlic and sauté for 1-2 minutes.
- Pour in heavy cream, bring to a simmer for 5-7 minutes until thickened. Whisk in Parmesan cheese until smooth and season with salt, pepper, and nutmeg.
Cooking the Pasta
- Bring a large pot of salted water to a boil, add fettuccine, and cook until al dente. Reserve 1 1/2 cups of pasta water before draining.
Combining & Serving
- Transfer hot drained fettuccine to skillet with Alfredo sauce. Toss gently to coat, adding reserved pasta water as needed. Fold in crispy chicken, garnish with parsley and extra Parmesan. Serve immediately.
