- In a bowl, combine the shredded chicken, cream cheese, beans, jalapeño, shredded cheese, salt, and pepper. Mix until well combined.
- Take an egg roll wrapper and place 2 tablespoons of the filling in the center. Fold the wrapper according to package instructions, sealing the edges.
Cooking
- Preheat the air fryer to 375°F (190°C).
- Lightly coat the egg rolls with cooking spray or oil.
- Place the egg rolls in the air fryer basket in a single layer, without overcrowding.
- Cook for 12 minutes, turning halfway through, until golden and crispy.
- Serve warm with your favorite dipping sauce.
Notes
These egg rolls are perfect for meal prep. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for 4-6 minutes at 350°F (175°C).
