  • 1 cup cream cheese, softened Low-fat cream cheese can be used.
  • 1/2 cup canned beans (black beans or pinto beans), drained Choose based on preference.
  • 1-2 pieces jalapeños, finely chopped Adjust based on heat preference.
  • 1 cup shredded cheese (cheddar or Mexican blend) Use reduced-fat for a lighter option.
  • 1 package egg roll wrappers Whole-wheat or rice wrappers for a healthier alternative.
  • as needed cooking spray or oil for frying Lightly coat the rolls before air frying.
  • to taste salt and pepper Adjust seasoning to preference.

Method
 

Preparation
  1. In a bowl, combine the shredded chicken, cream cheese, beans, jalapeño, shredded cheese, salt, and pepper. Mix until well combined.
  2. Take an egg roll wrapper and place 2 tablespoons of the filling in the center. Fold the wrapper according to package instructions, sealing the edges.
Cooking
  1. Preheat the air fryer to 375°F (190°C).
  2. Lightly coat the egg rolls with cooking spray or oil.
  3. Place the egg rolls in the air fryer basket in a single layer, without overcrowding.
  4. Cook for 12 minutes, turning halfway through, until golden and crispy.
  5. Serve warm with your favorite dipping sauce.

Notes

These egg rolls are perfect for meal prep. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for 4-6 minutes at 350°F (175°C).
