  • 8 ounces elbow macaroni
  • 1 cup cottage cheese Use low-fat for a lighter option
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk Use reduced-fat milk for a lighter version
Spices
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method
 

Cooking the Pasta
  1. Cook the macaroni according to package instructions and drain.
Making the Cheese Sauce
  1. In a medium saucepan, melt the butter over medium heat.
  2. Stir in the flour and cook for about 1 minute.
  3. Gradually whisk in the milk, continuing to stir until the sauce thickens.
  4. Add garlic powder, onion powder, salt, and pepper to the thickened sauce.
  5. Stir in the cheddar cheese until melted and smooth.
Combining Ingredients
  1. Add the cooked macaroni and cottage cheese to the cheese sauce, mixing until well combined.
  2. Serve warm.
