  • 2 cups cooked chicken, shredded Use leftover cooked chicken or roast a chicken breast.
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup cream cheese, softened Use low-fat cream cheese for a healthier version.
  • 1 cup shredded cheddar cheese Use reduced-fat cheddar for fewer calories.
  • 1/2 cup chicken broth Use low-sodium and gluten-free broth if needed.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil For greasing the baking dish.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, broccoli, cauliflower, cream cheese, cheddar cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Mix well until all ingredients are combined.
  4. Drizzle olive oil in a baking dish and pour the mixture into the dish, spreading it evenly.
  5. Bake for 25-30 minutes or until the casserole is bubbly and golden on top.
  6. Let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge. For freezing, cut into portions and freeze for up to 3 months.
