  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream Can be substituted with half-and-half or Greek yogurt for a lighter version.
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Method
 

Cooking
  1. Cook the gnocchi according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté the garlic until fragrant.
  3. Add the spinach and cook until wilted.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in the feta cheese and mix until smooth.
  6. Add the cooked gnocchi to the skillet and gently toss to coat.
  7. Season with salt and pepper to taste.
  8. Serve warm, topped with grated Parmesan cheese if desired.

Notes

For a healthier version, use less oil and add more vegetables like mushrooms. Store leftovers in an airtight container for up to 3 days, reheat gently.
