  • 1 package gnocchi Store-bought potato gnocchi works well.
  • 2 cups fresh spinach Can use frozen spinach, thawed and drained.
  • 1 cup feta cheese Crumble before adding to the dish.
  • 1 cup heavy cream Can substitute with half-and-half or whole milk for a lighter version.
  • 2 tablespoons olive oil For sautéing garlic and spinach.
  • 2 cloves garlic, minced Adjust quantity according to preference.
  • to taste Salt and pepper
  • Grated to taste Parmesan cheese For serving, optional.

Method
 

Cooking Gnocchi and Sauce
  1. Cook the gnocchi according to package instructions until they float, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the fresh spinach and cook until wilted.
  4. Pour in the heavy cream and bring to a simmer.
  5. Add the cooked gnocchi and crumble the feta into the skillet. Stir everything together and cook for an additional 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with grated Parmesan cheese.

Notes

To store, cool the dish to room temperature within two hours, then place in an airtight container in the fridge for up to 3 days. Reheat over low heat, adding a splash of milk or water if necessary. The dish does not freeze well due to the cream texture but you can freeze cooked plain gnocchi separately.
